Aquaculture feeds include a combination of proteinaceous vegetable material and proteinaceous fish material. An emulsified hydrolysate made by the process of:(a) providing fresh food waste using a highly efficient and effective collection system; (b) grinding the fresh food waste using a first grinder and optionally a second grinder to produce a fresh food waste particle slurry; (c) incubating the fresh food waste particle slurry under constant agitation by adding to said fresh food waste particle slurry a combination of enzymes comprising at least one enzyme to digest proteins, at least one enzyme to digest fats and lipids, at least one enzyme to digest cellulosic material and at least one enzyme to digest other carbohydrates and incubating the mixture at two or more temperatures ranging between about 100° F. and 130° F., to match the temperature performance curves of the enzymes wherein a third grinder is used to create shear during at least part of the incubating, whereby a hydrolysate comprising incubated fresh food waste particles is produced; (d) pasteurizing the hydrolysate to kill pathogens; (e) separating the hydrolysate into a liquid hydrolysate and incubated fresh food particles using a coarse screen and a fine screen; (f) stabilizing and preserving the hydrolysate, using acid and/or preservatives, or using organic acids and/or organic preservatives allowed for use in the production of a certified organic hydrolysate; (g) emulsifying the stabilized hydrolysate using an ultra-high-shear mixer to produce a stabilized, emulsified hydrolysate; and (h) blending the emulsified hydrolysate in large storage tanks with circulation pumps, to assure the consistency of the finished product.2. A novel and practical process to convert the oily sludge from food industry and waste water treatment into a non-oily feed product in dry and free-flowing form for animal applications is provided. The combination of an alkaline agent to encapsulate the oily sludge into a non-oily form and a particulate material to provide solid surface as a carrier is used to convert the oily sludge into a non-oily wet paste or particle form. Then a drying process with a commercial dryer is applied for producing an animal feed product in non-oily, dry and free-flowing form. The animal feed product retains a fat level, which is generally higher than normal animal feed products, but in an easily handled, non-oily, non-sticky, free-flowing and dry form. The process of the invention converts the problematic food waste sludge with oily, sticky and wet properties into the useful nutritional products with the improved properties. The process in the present invention is practical and economical to be used, which could resolve the problem from these oily sludge materials, save and create millions of dollars for food and feed industries and waste water treatment plants.

Processes, systems, and articles of manufacture are disclosed relating to edible meat pieces obtained from a continuous process where each piece generally appears to be home cooked on a grill or cooked in a smoke house with randomized sear and grill marks and smoke aroma. The invention, in its various embodiments, provides processes for manufacturing shelf-stable food treats comprising: starting with proteinaceous material (ground or whole), mixing the proteinaceous material with preservatives and flavor enhancers to form a foodstuff, extruding proteinaceous material (if ground) through at least one die opening that is at least partially irregular to form at least one strip of extrudate, cooking the extrudate or whole proteinaceous material to form a cooked product, coating the cooked product with a basting solution, grilling the basted products to obtain grilled products with searing, grill marks, and smoke aroma; and cutting the grilled product at a cutting angle into pieces.

The invention provides food analogs and methods of making the food analogs. In general, the methods comprise comminuting one or more meats to produce a meat slurry, admixing one or more flours to produce a powder blend, admixing the meat slurry and the powder blend to produce a dough, and extruding the dough at a shear mechanical energy ranging from about 50 kJ/kg to about 500 kJ/kg and at a temperature ranging from about 60° C. to about 120° C. to produce a food analog. Colorant can be added before, during, or after the admixing or extrusion processes to provide a more natural appearance to the food analog. The food analog can be a meat analog having the appearance of a meat or a non-meat food analog such as a fruit or vegetable.
