The cutter blade is configured to rotate about a rotational axis. The pressure roller is rotationally fixed. The cutter blade and the pressure roller are positioned relative to each other such that pressure is applied to a material fed therebetween. As the cutter blade rotates relative to the pressure roller, the pressure applied to the material being fed therebetween allows for a width of material to cut by a cutting edge of rotating cutter blade. An embossing roller may be used in place of the cutter blade to emboss material. The device also includes guide for guiding material into the machine, pressure adjustment for pressure applied to the material, and rotational speed control. A method for using the rotary cutting device is also disclosed.

The competed draft is transferred to a check sale where a final draft weight is measured and compared to a sum of the intermediate weight and the weight of the completion slices. Comparison of the weight is used to adjust slicing parameters for more precise targeting of the desired weight of the next draft. Completion slices may be adjusted in thickness to minimize the giveaway weight.

In other words, the food product to be sliced is placed on the slicer, and the slicer automatically slices the food product and stacks the sliced product, in a configuration that is presentable to the customer. In some embodiments, the machine is designed to have certain zones that can be cleaned or replaced, while the rest of the machine is never contaminated. In addition, the reciprocating blade is inexpensive and easily replaceable, thereby eliminating the need to sharpen the blade. 1. An apparatus for slicing food products, in particular sausage, meat or cheese, includes a product support for at least one product, a cutting blade which is disposed after the product support and to which the product can be supplied along a conveying direction, and at least one product holder movable along the conveying direction and cooperating with the product at least at times during the slicing procedure, wherein the product support has a loading zone which is disposed between a starting position and an end position of the product holder and in which the product support can be loaded with the product and wherein the product holder is movable from the end position back into the start position while bypassing the loading zone. 1. An apparatus for slicing food products , comprising:a product support for at least one product;a cutting blade which is disposed after the product support and to which the product can be supplied along a conveying direction; andat least one product holder movable along the conveying direction and cooperating with the product at least at times during the slicing procedure,wherein the spacing between the product holder and the product support is adjustable during the slicing procedure.2. The apparatus in accordance with claim 1 ,wherein the product holder is configured for firmly holding the product at its rear end section.3. The apparatus in accordance with claim 1 ,wherein the spacing is adjustable such that the product holder holds the product in contact with the product support during the slicing procedure.4. The apparatus in accordance with claim 1 ,wherein the product holder can be lowered for slicing a tapering rear end section of the product such that the product holder holds a lower side of the rear end section of the product in contact with the product support during the slicing procedure.5.
