The invention relates to a method for the digestion of starch (native starch or processed starch, such as cationic starch), in which method an aqueous slurry of the starch is treated with steam in a cooking vessel (4) and is thereby subjected to shearing forces, wherein, by introducing steam, the slurry containing starch is heated in the cooking vessel (4) to a temperature between 85°C and 110°C, and the step of digestion is carried out until the desired degree of digestion has been reached. In the digestion of native starch, the digestion can be carried out with the addition of an enzyme, for example, an amylase. The invention further relates to a cooking vessel (4) which can be used when carrying out the method for the digestion of starch.

A process for modifying starch comprises atomising an aqueous slurry of non-pregelatinised starch into an internal chamber in a bi-fluid nozzle of a spray dryer and treating the atomized slurry, in the internal chamber, with superheated steam to cause partial gelatinisation of the starch. The aqueous slurry containing partially gelatinised starch is discharged through an outlet in the internal chamber into a reactor where the droplets containing the partially gelatinised starch are subjected to further treatment with superheated steam, resulting in the completion of the gelatinisation of the starch in the reactor. Also disclosed is a bi-fluid nozzle for use in spray drying starch which comprises a nozzle body, a nozzle cap and an internal chamber located between the nozzle body and the nozzle cap. The nozzle body comprises at least one atomiser, for connection to a supply of an aqueous starch slurry, for atomising the slurry into the internal chamber and it has at least one inlet, for connection to a supply of superheated steam under pressure, for introducing superheated steam under pressure into the internal chamber. The nozzle cap comprises at least one outlet from the internal chamber. The internal chamber also comprises an interchangeable spacer element with a length of from 10 to 60 mm enabling the length of the internal chamber to be changed. A pregelatinised starch and its use in foods, especially baby foods and infant formulas, feed, pharmaceuticals, cosmetics and personal care products are also disclosed.

An aq. dispersion of starch and an enzyme are gelatinised by live steam injection. The gelatinised soln. is hydrolysed in a conversion zone by holding for a while at a selected temp. After which the enzymes are de-activated to provide a starch paste. The conversion zone now takes the form of a long passage through which the soln. flows at constant temp. and in non-turbulent fashion at a constant speed throughout the length of the passage. Flow t hrough the conversion zone is pref. achieved by pumping the intial dispersion and/or recycled product, the latter to circulate incompletely converted fractions of dispersion. The constriction in the tube, e.g. a diaphragm with one or more passages or a nozzle, may be followed by a gradual widening of the tube cross-section. Since the starch pastes formed are generally used at a temperature below that of their formation, e.g. 50-100 DEG C., the apparatus may be extended by provision, after the inlets for gelatinizing agents, of at least one further constriction which is followed by orifices in the tube wall for supply of cooling, diluting and/or preserving liquids. The apparatus may be yet further extended by provision, after the orifices for inlet of cooling liquid, by a further constriction followed by orifices in the tube wall for return of the already gelatinized starch to a point upstream, e.g. to a point immediately after the commencement of paste formation. The starch hydrolyzate is essentially characterized by a polymolecularity index of less than 2.8, a molecular mass by weight of between 5,000 and 100,000 daltons and a number molecular mass of less than 8,000 daltons.

A process tube, through which the slurry flows, is surrounded by a pressure vessel. The pressure vessel acts as a high pressure steam boiler tank, heating the process tube. The process tube, having a length to accommodate mixing of the slurry within, act as a reaction chamber, into which steam is injected via a direct steam injection assembly. The integration of the injector, reactor, and boiler avoids the need for an external boiler and associated plumbing.

A process for modifying starch comprises atomising an aqueous slurry of non-pregelatinised starch into an internal chamber in a bi-fluid nozzle of a spray dryer and treating the atomized slurry, in the internal chamber, with superheated steam to cause partial gelatinisation of the starch. In the apparatus used the starch slurry feed is held in tank 10 (Fig. 1) and is fed from the outlet 11 to a pump 12 from which it is pumped at high pressure through line 13 to a diverter valve 14 and inlet 16 to reactor 17. The reactor is a closed, insulated vessel filled with heat exchange fluid and the reactor tube 18, 20 and 22 is made up of stainless steel. Coil 18 is the heating zone, coil 20 is the first reaction zone and coil 22 is the second reaction zone. The restriction zones 19 and 21 have the appearance shown in Fig. 2 where 18 and 20 are the tubes previously defined and 30 represents the elongated restriction zone.

A process and apparatus are described for producing modified starch products. In the method of the invention, a slurry of starch is continuously moved at elevated temperature and pressure through a tubular heating zone and the hot fluid mass emerging from the heating zone is forced through a flow restricting zone within which the fluid mass is highly compressed. This highly compressed fluid material emerges from the confining zone into a tubular reaction zone with a sudden release of energy in the form of a fine spray or mist. The compressive forces followed by the sudden energy release act on the starch molecules to temporarily greatly increase the reactivity of the starch within the reaction zone, whereby modified starch products are quickly formed.

Abstract of the Disclosure A process and apparatus are described for producing modified starch products. In the method of the invention, a slurry of starch is continuously moved at elevated temperature and pressure through a tubular heating zone and the hot fluid mass emerging from the heating zone is forced through a confining zone within which the fluid mass is highly compressed and from the confining zone into a tubular reaction zone maintained at an elevated pressure substantially below the pressure of the starch liquid in the confining zone. A highly reactive starch liquid emerges from the confining zone into the tubular reaction zone in the form of a fine spray or mist with a sudden release of energy and contin-uously moves through the tubular reaction zone to form into a homogeneous liquid modified starch product.

In a further embodiment, 0.01% to 50% by weight of starch dry substance, of a starch modifying agent may be present in the mixture.
