A cutting device, knife carrier suitable for use in the cutting device, a cutting system and method for cutting a strand of stacked bands of a food product are disclosed. A method of production of the food product packaged in tubes is disclosed, the tube being injected by bread, with that the tuba is either single-chambered or consists of two and more chambers. A process and a machine for cleaning small cheeses of millstone shape, i.e. having two spaced, parallel, circular faces spaced by a bellied, circumferential edge wall. The machine comprises a support on which the cheese initially is carried with its circular end faces horizontal. The cheese is then held in a clamp which grips it around its edge wall while the upper face is mechanically cleaned, e.g. with a rotary brush. The cheeses opposite end faces are then clamped between a pair of horizontal, rotary plates which rotate the cheese about its central, vertical axis while the edge wall of the cheese is abrasively cleaned. After the upper face has been cleaned the cheese may be edge gripped once more, turned over through 180 deg. and held thus while the second face is cleaned. A motorised carousel is pref. employed to carry a cheese successively to separate work stations for first face cleaning, edge cleaning, second face cleaning and discharge. The abrasive cleaning of faces and edge wall is pref. carried out by rotary brushes applied with limited pressure by fluid power cylinders. The complete cleaning cycle of all surface areas of the cheese is completely automatic. The crust is thoroughly cleaned without chipping or splintering the edge wall. The machine can be reset to deal with a wide range of sizes of cheese.

The method according to the invention consists in extruding drained curdled milk so as to obtain, at the exit from a die 6, a compressed sausage of curd in a dense pasty state, in moulding the said compressed sausage in a mould 13 positioned opposite the die so that its hollow part is fed under pressure until it is full, and in then separating the mould 13 from the die 6, then in removing the cheese from the mould by introducing a gas at the bottom of the hollow part of the mould. The method of the invention makes it possible to manufacture cheeses having the texture of an extruded cheese but having much more diversified shapes, particularly the shape of a portion of a torus.
