The gum base compositions comprise (a) a polyvinyl acetate matrix, in which the polyvinyl acetate is in the form of a continuous phase, and (b) casein, a modified casein, or both casein and a modified casein, wherein particles of casein and/or modified casein are dispersed throughout the polyvinyl acetate matrix. In preferred embodiments the gum base composition also contain polyglycerol polyricinoleate, mono- and di-gylcerides esterified with mono-acetyl and di-acetyl tartaric acid, acetylated monoglycerieds, lecithin and sodium or calcium stearoyl-2-lactylate. Chewing gums of the present invention contain a chewable gum base as described above, in combination with one or more sweeteners and/or flavouring agents, and preferably also glycerol triacetate and stearic acid.

The organic acid and fructose combination provides a synergistic saliva stimulating effect greater than that of either ingredient alone. The present invention is an improved method for producing an aqueous solution of zein. In accordance with this method, the water to be used has its pH adjusted to an intermediate pH between about 8.0 and about 10.5. Following this adjustment, a quantity of powdered zein is added to the water in an amount between about 5 and about 20 percent by weight of the water and zein mixture. This mixture is agitated until the zein is well dispersed in the water. Also, during the zein addition, the pH is readjusted to the 8.0 to 10.5 range. After the zein is well dispersed, the pH of the mixture is adjusted to a final pH between about 11.5 and about 12.1. Agitation of the mixture is continuted until substantially all of the zein is solvated in the water.

The present invention also specifically discloses a process for synthesizing styrene-butadiene rubber that is particularly useful in manufacturing chewing gum base for soft chew applications which comprises copolymerizing about 1 phm to about 12 phm styrene and about 88 phm to about 99 phm of 1,3-butadiene in an aqueous emulsion, wherein said copolymerization is conducted at a temperature which is within the range of about 1° C. to about 20° C., and wherein said copolymerization is initiated with an initiator system which is comprised of (a) a free radical generator, (b) a reducing agent selected from the group consisting of ascorbic acid, isoascorbic acid, and ascorbic acid derivatives having the structural formula: wherein R is an alkyl group containing from 1 to 30 carbon atoms, and (c) a water-soluble metal salt of iron, copper, cobalt, nickel, tin, titanium, vanadium, manganese, chromium or silver.
