Реферат: This invention refers to meat, processing indus¬try, in particular to production of special dietary sorts of sausage articles. Technical result is to increase dietary properties of boiled sausage artticles and their organoleptic qualities. The method comprises grinding meat corning, introducing additives for correcting mineral composition obtained during bones processing in amount of 1,2% of meat raw, forming sausages and heat processing. Albumin and mineral composition is obtained from meat and bone reminder received by repeated acid extraction of the remainders, albumen sedimentation and drying.
