A coupling has a safety lock and receives a flexible driveshaft with a tube into a hand-tool. The coupling contains a pinion as part of a drive transmission of the hand-tool and a lever on a handle. An opening of the pinion can be connected to an end of the driveshaft, and the lever engages into a retaining groove of the tube as long as the lever is gripped together with the handle. In a drive position, a direct positive engagement between the driveshaft and the pinion is produced, and the transmission is thus driven. The coupling contains a spring that pushes the driveshaft into a rearward rest position as soon as the lever on the handle is released, whereby the positive engagement between the driveshaft and the pinion is disengaged and the transmission is thus set to rest.

A rotary knife assembly includes a rotary knife with a spinning blade, a motor operable to power the rotary blade, and a flexible drive cable connected between the motor and knife to transmit rotational power to the blade. The assembly includes a safety release feature drivingly intercoupled between the motor and drive cable so as to drivingly disconnect the cable and knife from the motor when excess torque is experienced. The safety release feature is in the form of a breakaway drive lug operable to normally transmit rotational power from the motor to the knife. In the event of binding of the knife or kinking of the drive cable, excess torque serves to break the drive lug in order to disengage the motor from the knife. 1. The invention relates to a tool for manual or especially automatic removal of tenderloins from half-carcasses of slaughtered animals. The tool comprises a circular knife blade, a blade housing supporting the knife blade, and a movable knife blade protector. The tool is connected to a motor capable of driving the knife blade. A tenderloin is partly cut free with the knife, the knife blade protector is activated to protect the knife blade and the tool is used to pull the tenderloin free from the half-carcass without damaging the tenderloin with the knife. A pneumatic control system for a meat trimming knife in which an annular cutting blade of the knife is rotated by a flexible cable driven by an electric motor mounted remote from the knife. A diaphragm mounted in the handle of the knife is compressed by the manual movement of a piston by an operator. The diaphragm is connected to a pressure switch which senses compression of the diaphragm and generates an electric control signal which actuates an electric clutch which couples the output shaft of the electric motor to the flexible cable for rotating the cutting blade. Upon release of the lever by the operator, the pressure switch senses the change in pressure which signals the clutch to disengage the motor shaft from the flexible cable to stop the rotation of the cutting blade. In a modified embodiment a diaphragm pump supplies a flow of low pressure, low volume air to the handpiece. KNIFE Abstract of the Disclosure A hand knife for use in processing meat. The knife has a handle, a circular housing secured to one end of the handle, and a rotatably power driven ring-like blade in part circumferentially contained by the housing. An arcuate wear pad or plate overlies a portion of the inside surface of the blade adjacent the handle limiting movement of the blade away from the blade housing near the handle and against the surrounding housing opposite the handle during use, distributing wear that otherwise occurs between the interior of the surrounding housing and the outside of the blade, and transferring some of the wear to the exterior of the wear plate and the inside of the blade. The ends of the wear plate are tapered outwardly and toward the blade and each has a surface transverse to and overlying the inside surface of the blade. The transverse surfaces form knife edges at the inside surface of the blade and deflects outwardly cut portions of product being processed as they move through the blade and housing and limit their movement circumferentially with the blade.

The knife further comprises a head assembly ( 300 ) extending from a handle assembly ( 200 ), the head assembly for rotatably supporting the annular rotary blade. The knife also includes a drive mechanism ( 600 ) disposed within the head assembly comprising a pinion gear ( 604 ) and a pinion shaft ( 970 ) rotatably disposed within a bushing ( 610 ), the drive mechanism being operatively coupled to the annular rotary blade, rotating the annular blade during use. A movable lubrication assembly ( 900 ) supported along a frame body between the handle assembly and the annular rotary blade, the rotatable lubrication assembly being rotatably disposed about a longitudinal axis of the handle assembly and providing a lubrication path ( 1000 ) extending from a lubrication adapter ( 924 ) to the pinion gear ( 604 ).

KNIFE ABSTRACT OF THE INVENTION A hand knife having a ring-like rotary blade the diameter of which is considerably greater than its axial. length rotated by a motor in a handle extending normal to the axis of rotation of the blade. The blade of the knife is rotatably supported in a blade housing that surrounds it and which can be removed together with the blade for sharpening of the blade by merely loosening a pair of threaded fasteners. The knife also has a member in the interior of the blade which guides a part being removed from a product being processed through the central opening of the blade and interferes or restricts the movement of the part with the circular rotation of the blade thereby increasing the efficiency of the cutting operation. The material guiding and restricting member is connected to the knife by the same fasteners which connect the knife housing to the knife handle, may be angularly adjusted within the blade and/or may also be disassembled from the knife without removing the fasteners.

The blade housing has a generally circular groove (38, 138, 238) to receive a ring gear portion (56, 256) of the blade while a cutting portion (60) extends from the housing. One arcuate wall portion (38b, 138b, 238b) of the housing is frusto-conical and faces a similarly contoured peripheral portion of the blade ring-gear. In the preferred construction the housing recess is formed by a cylindrical wall that surrounds the ring-gear portion of the blade and by a frusto-conical wall that is encircled by the ring-gear portion of the blade. A blade retainer (28, 128) secured to the handle acts against a radial flange (62, 162) of the blade when tightened, to retain the blade within the groove, and when loosened allows removal of the blade from the housing.
