The invention discloses a green extraction method of polyphenol compounds in olive oil, which comprises the following steps: mixing a hydrogen bond acceptor reagent with water, and carrying out ultrasonic treatment to obtain a water-based eutectic solvent; olive oil, normal hexane and a water-based eutectic solvent are subjected to vortex mixing, then ultrasonic treatment and centrifugation are conducted, and after centrifugation, an oil layer located on the upper layer and a eutectic solvent layer located on the lower layer are divided; taking the eutectic solvent layer as an extracting solution; the extracting solution contains a polyphenol compound.
