... 본 발명은 바다장어(Sea eel)를 15kg 손질 저온저장고(숙성실)에서 48시간 2℃에서 2차 숙성(Ripening)시킨다. 《실시예》로 12가지 약초(0011)부터 (0021)까지 12가지약초를이용 무쇠솥에 물 50L을 함께 넣는다. 12가지 약초와 50L 물을 무쇠솥에 넣고 120∼130℃에서 1차가열(加熱)한다. 상기 (0026)의 방법에서 65℃로 2차 가열하여 상기 약초액 10L를 만들어서 20℃에서 식힌다. 정종33.34L 백와인(탄산 없는것)16.66L 첨가물(添加物)50L 그리고 12가지약초로 만들어진 약초액 10L 바다장어를 손질하여 숙성돤것 15kg을 약초액을 침식(浸蝕)시킨다. 2℃ 저온저장고(숙성실)에 단지를넣고 (0028)의 내용과같이 단지에 바다장어를 손질하여 1차숙성 (Aging 근막이 자체효소인 카텁신 Cathepsin (0036)숙성의 종류 (숙성 Aging 참고문헌 참조) 숙성된 바다장어를 넣고 약초액과 첨가물(정종과 탄산없는 백와인)을 단지에넣고 단지입구를 밀봉후 56∼60시간 약초액 침식숙성(藥草液浸蝕熟成 Acid erosion)시킨다. 약초액 침식숙성(Acid erosion)시킨 바다장어 15kg을찜통에 넣고 120∼130℃에서 일정시간 가열(加熱)한다. 바다장어를 찐후 -45℃의 급냉동실 에서 상기 찐바다장어(Steamed sea eel) 1.5kg씩 진공 소포장 하여 최소 48시간 이상 급냉동하여 보관한다. 바다장어냉숙포의 소스는8가지 재료를 이용하여 65℃화력으로 가열한다. 타지않게 저으면서 소스를 만들어 20℃에서 식힌다. -45℃에서 급냉동보관된 상기 약초액침식숙성된 바다장어를 2∼3mm 두께로 얇게 포(slicer 脯)를 뜨는 단계. 바다장어냉숙포와 소스 참당귀잎이나 참나물을 첨가하여 바다장 어냉숙포 (海長魚冷熟脯 Seaeel cold ripeningslice)를 발명한 것이다. 바다장어의 약초액 침식숙성 시킨것은 육질에 탄력성이 있고 방부효과가 있음을《실시예》를 통하여 수년간 반복한 결과 방부(防腐)효과가 있다 ...
