The present invention relates to a structure of noodles having a concave-convex surface and, more specifically, the purpose of the present invention is to provide a structure of noodles with a concave-convex surface, wherein the noodle is formed to have upper and lower concave-convex surfaces, thereby increasing the texture and chewy mouthfeel of noodles, shortening the cooking time for noodles, and uniformly seasoning the entire noodles without entanglement of the noodles for a short period of time when the noodles are mixed.
