The pineapple processing byproducts, the extraction product from pineapple processing byproducts, or the extract from pineapple processing byproducts of the present invention contains a proteolytic enzyme, such as bromelain, and thus is suitable for the disposal of organic wastes containing proteins. Since the pineapple processing byproducts are resources that are dumped as wastes, the use of the method of the present invention can ensure superior economical efficiency from a commercial point of view in the disposal of organic waste.
