The invention relates to a preparation method of a biological deodorization and fermentation seaweed flavored extract. According to the preparation method, methods of biological fermentation for deodorization and glycosylation for aroma enhancement are adopted in the processing procedure, to be specific, L.helveticus+L.reuteri (1: 2) or L.casei+L.reuteri (1: 1) or L.casei+L.reuteri (1:2) are adopted to carry out mixed fermentation for deodorization, and a method of adding xylose and glucose to react for aroma enhancement is adopted, and thus the seaweed flavored extract is obtained. According to the extract disclosed by the invention, a little amount of products, such as seaweed micropowder and seaweed gourmet powder, and other natural seasonings can be added as ingredients of the seaweed flavored food or can be used for production of seaweed seasonings.
