PROBLEM TO BE SOLVED: To provide a method for producing a grain-derived essence, satisfactory in flavor and color, and nutritionally well-balanced with various types of saccharides, amino acid and minerals. SOLUTION: This method for producing buckwheat essence comprises steps of (1) liquefaction and saccharification of buckwheat flour, (2) degradation of protein, (3) enrichment of the effluent by filtration, and (4) heat treatment under normal or elevated pressure, or else (1) liquefaction of buckwheat flour, (2) degradation of protein, followed by saccharification, (3) enrichment of the effluent by filtration, and (4) heat treatment under normal or elevated pressure. This buckwheat essence, containing various types of saccharides, amino acid, minerals and rutin efficacious against arteriosclerosis, is nutritionally well- balanced, and preventive of adult diseases, e.g. arteriosclerosis and hypertension.
