The potato starch processing method comprises the following steps: cleaning and removing stones in potatoes, crushing and grinding the cleaned potatoes repeatedly, separating, dehydrating, drying and smashing to obtain the potato starch. According to the processing method, in the crushing and grinding procedures, acid slurry is added to avoid the oxidation of the potatoes and a physical method of controlling water pressure and amount is used in the separating procedure to totally separate impurities from the starch primary slurry; through the physical method, the anti-oxidation effect is realized. In the processing method, a bleaching process is eliminated, so that the use of bleaching chemical agents is avoided, the addition of the bleaching chemical agents is prevented, the environmental protection purpose is realized, the procedures are simplified, and the cost is reduced.
