The invention discloses a preparation technique of a condensed clarified peach juice. In the technique, fresh peaches with proper maturity are selected as materials and are manufactured into the condensed clarified peach juice with the content of a soluble solid matter not lower than 50.0 Brix after the peaches are washed, picked, enucleate, squeezed, clarified, filtered, condensed, sterilized and canned. The preparation technique of a condensed clarified peach juice has the following advantages that: 1, the peach juice produced by the technique of the invention is a clarified transparent liquid without deposits and suspensions; during the producing process, no additive and antiseptic are added; the peach juice has inherent taste and fragrance; 2, the content of a soluble solid matter in the condensed clarified peach juice produced by the invention is high, thus being convenient for transportation and prolonging the shelf period of the product.
