Methods for recovering free fatty acids from fats and oils having high free fatty acid content are provided. In the method, fats and oils are treated with a mixture having an alcohol to result in a low-free fatty acid oily phase and an alcohol phase. The mixture may also include an alkali. The alcohol may be a monohydric alcohol and an aqueous alcohol, such as an aqueous alcohol having a concentration of at least about 15% alcohol by weight. The alcohol phase may be treated with an acid to form an aqueous alcohol phase and a lipid alcohol phase, wherein the lipid alcohol phase includes free fatty acids, which may be recovered. Fats and oils amenable to such a method may include, but are not limited to, waste fats, waste oils, high acid grease, high acid tallow, and corn oil, such as corn oil produced at an ethanol production plant.

An oil and fat composition is provided having superior operability and processability, in terms of a liquefying phenomenon of sugar, tackiness and texture of fried doughnuts, filling condition and hardness of shortening, and solidifying time of coating chocolate, by the superior crystallization-promoting effect. A palm-based fractionated oil and fat has 70-90% by weight of the tripalmitin content to triglyceride and 1-8% by weight of the unsaturated fatty acid content to total fatty acid. The oil and fat includes a hard part obtained by, for example, performing a crystallization operation of palm super stearin with iodine value 10-17 so that the slurry SFC is 20% or less, and fractionating the slurry so that the hard part yield is 26% by weight or less. The fractionation is preferably performed so that a numerical value of the hard part yield/the slurry SFC is 10 or less. 1. A cocoa butter substitute comprises a mixture of cocoa butter and a fraction obtained by fractional crystallization of lard from a solvent, this latter fraction having an iodine value of 25-40, preferably 30-40, a softeining point of 35-45 DEG C., and a dilatation at 20 DEG C. of at least 1200 and preferably not less than 2000; details are given of methods whereby both the softening point and the dilatation may be determined. The lard fraction is suitably obtained by fractionally crystallizing lard from anhydrous acetone to remove at least 60% and up to 80% (by weight of the lard) of the lowest melting glyceride fraction. Up to 5% (by weight of the lard) of the highest melting glyceride fraction is also usually removed. The lowest melting glyceride fraction is removed from the lard as a solution in insufficient solvent to dissolve all the lard at reduced temperatures, leaving the remaining lard glycerides as a solid. The highest melting fraction is then removed in a similar manner except that the required cocoa butter substitute fraction this time is the portion that is dissolved, the solvent being thereafter removed to recover the fat. Detailed directions are given as to the manner in which the fractional crystallization may be performed. If desired, solvents other than acetone, such as ether or light petroleum, may be used in the fractional crystallization. A process for the treatment of vegetable oils in order to improve their cold stability, characterised in that the oil for treatment is first cooled to a temperature so selected as to allow crystallization of the compounds which are to be eliminated, and then at least some of said oil is subjected to an inert gas pressure of 4-10 bars and then expansion to atmospheric pressure so as to create fine gas bubbles which are fixed on the crystallized compounds so as to produce a foam having a density below that of the oil in the form of a complex comprising the crystals and gas bubbles, which rises to the surface of the container, to enable a clarified oil having a crystal content less than 30 ppm to be obtained with a yield of above 90% at the bottom part of the container after decantation.

Provided herein are methods for winterizing microbial oils. In prior art winterizing methods involving dry fractionation a large amount of solids are removed, resulting in a poor liquid oil yield. The method of the invention allows for higher liquid oil yield by stepwise temperature adjustment and solid removal without loss of liquid fraction of the oil. The method as claimed involves heating the oil to a first temperature and maintaining the oil at the first temperature for a first period of time; reducing the first temperature of the oil after the first period of time to a second temperature over a second period of time, wherein reducing the first temperature produces a first solid fraction and first liquid fraction of the oil; removing the first solid fraction from the oil; reducing the second temperature of the first liquid fraction of the oil over a third period of time to a third temperature, wherein reducing the second temperature of the oil produces a second solid fraction and second liquid fraction of the oil; removing the second solid fraction from the oil; and recovering the second liquid fraction of the oil; wherein the oil is a microbial oil; and wherein the method is performed in the absence of solvent. The recovered liquid fraction may be utilized to produce biofuel or in pharmaceuticals, nutraceuticals, food supplements, animal feed additives and cosmetics.
