[0001] The invention refers to a procedure for treating fresh meat in accordance with the generic term of the

The method comprises introducing meat in a container (1), introducing treatment fluid in the container, rolling and kneading the meat through a rotatable blade (6), periodically inducing mechanical oscillation in the meat and the treatment fluid, where the mechanical oscillation is induced for a pre-determined cycle duration and a regeneration of the mechanical oscillation takes place by predetermined time duration. The total treatment duration is a given time duration. The treatment fluid is periodically sprayed in a given quantity on the meat. The method comprises introducing meat in a container (1), introducing treatment fluid in the container, rolling and kneading the meat through a rotatable blade (6), periodically inducing mechanical oscillation in the meat and the treatment fluid, where the mechanical oscillation is induced for a pre-determined cycle duration and a regeneration of the mechanical oscillation takes place by predetermined time duration. The total treatment duration is a given time duration. The treatment fluid is periodically sprayed in a given quantity on the meat. The given cycle duration of the mechanical oscillation is 40-60 seconds and the duration of the regeneration is 5-30 seconds. The total treatment duration is 10-100 minutes. The oscillation frequency is 1/2 and 60 Hz. The cycle duration of the mechanical oscillation, the duration of the regeneration and the total treatment duration are selectable dependent upon the type of the meat and size of the meat pieces. The rolling and kneading of the meat are carried out through the revolving blades periodically synchronized with the periodically induced mechanical oscillation. The periodical spraying of the treatment fluid is carried out during the induced mechanical oscillation and the regeneration. The meat is cooled during the total treatment duration at 1-5[deg] C. An independent claim is included for a device for the treatment of fresh meat.



1. Procedure for treating fresh meat with the following steps:
