SCAPULA REMOVAL DEVICE AND METHOD FOR MEAT ON THE BONE, AND DEBONING SYSTEM FOR MEAT ON THE BONE EQUIPPED WITH SAID DEVICE

　A scapula removal device for meat on the bone is equipped with: a bottom holder (170) that raises the bottom of the meat on the bone upward by pushing against the bottom of the meat on the bone from below, and horizontally moves said meat on the bone; a support member (158) that bends the meat on the bone in cooperation with the bottom holder (170) so that the tip of the scapula protrudes; and a chuck unit (190) that is attached to a robot arm and grips, in cooperation with the robot arm, the tip of the scapula. The chuck unit (190) includes: a base member (192) fixed to the robot arm; a grip member (194); and a lock member (202) that is supported by a base member (192) so as to be able to be moved forward and backward relative to a lateral plate part of the grip member (194), said lock member pinching the scapula in cooperation with the lateral plate part.
