SUBSTANCE: method involves clamping of the leg with bones by the ankle with a clamping unit, periodic movement of the clamping unit between multiple work places whereat one performs longitudinal cuts by way of blade movement along the bone and meat separation. The deboning device contains an elevating-and-downtaking shaft the lower end whereof is attached to the clamping unit and has an elevating-and-downtaking roller over the clamping unit. Additionally, the device contains an elevating unit provided for at each work place and containing a drive motor, a threaded shaft connected to the outlet shaft of the drive motor and an elevating-and-downtaking table installed on the threaded shaft by way of thread. The cutting process or separation process is performed at one of the work places by way of the elevating-and-downtaking roller placement on the elevating-and-downtaking table and elevating of the leg with bones by way of the elevating-and-downtaking table elevating. The elevating-and-downtaking roller moves on the way of movement under the weight of the leg with bones downwards from one work place to the following one. A method of carcass processing, such as a beef forequarter, comprises the step, prior to onset of rigor mortis, of releasing constraint on a number of muscles 2 to 8 by severing most of the contact of a muscle with surrounding tissue, so that the muscles are free to contract. This has the effect of upgrading the end use of the muscle from ground beef to cubed beef. The method may also include trimming of fat from the muscle and severing some of the connections between the muscle and surrounding tissue and bone. The muscles are free to contract for a period of at least 6 hours and preferably 24 to 96 hours before they are removed from the carcass. Also disclosed is a muscle removed using the method.

Apparatus for performing the process is also provided, comprising a powered conveyor, means for securing carcase parts thereon, and at least one automatic tool which acts on the carcase parts, as they pass, by washing, scrubbing, incising, splitting, scraping, tearing, cutting or like procedures. The process divides the meat recovery process into several steps carried out in sequence along the conveyor. The process is more hygienic, less labour-intensive, and considerably more productive than conventional procedures.

A separator apparatus that separates meat from bone in two distinct separation stages includes a rotary cam pump in series with a deboning screw assembly. In the first separation stage, substantially bone-free meat is separated from bone as the meat-bone mixture passes through the rotary cam pump, and expelled from the separator apparatus. The rotary cam pump then drives the remaining meat bone mixture into the deboning screw assembly, where a second separation stage occurs in which additional substantially bone-free meat is separated from bone as the meat-bone mixture passes through the deboning screw assembly, and is also expelled from the separator apparatus. The remaining bone residue is expelled from a bone residue outlet on the separator apparatus. Disclosed is a loin pullet for trimming off the backfat of a loin that has been scribed from a belly. This loin pullet has a frame on which is mounted a conveying system for engaging the loin and moving it towards a cutting zone. In this zone, a cutting tool is mounted for engaging the loin when it is moved by the conveying system, and for cutting the backfat to be trimmed off from the loin, with the so-cut backfat remaining attached to the belly. The cutting tool has two blades that are preferably controlled independently from each other. One of these blades is arcuate and positioned onto the frame so as to engage at least one part of the loin from a side of the loin opposite to the belly, and to cut the backfat to be trimmed from the loin. The other blade is L-shaped and positioned onto the frame so as to engage another part of the loin and cut the backfat to be trimmed thereof directly from the scribing line just below the back ribs of the loin. Both of the blades are long enough so as to ensure that all the backfat of the loin be trimmed off.

A method and device are disclosed for mechanically collecting meat from animal parts having an elongated bone extending through a sleeve of meat. The device includes a deboning unit adapted to be associated with a supporting tray for supporting one of the animal parts, a stripper diaphragm on one end of the supporting tray, when associated with the deboning unit, and a movable bone pusher rod and a movable tubular knife on an opposite end of the supporting tray, when associated with the deboning unit. The mechanism for advancing and retracting is adapted to move the bone pusher rod over one distance and the tubular knife over another distance smaller than the one distance, so as not to extend through the diaphragm. A rotating mechanism can rotate the tubular knife upon engagement with the meat and a cutting anvil for severing the meat from a trailing one of opposite ends of the elongated bone. Said carcass portions are in particular abdominal sections on part of the inner surface of which lies a row of more or less encapsulated ribs forming the bone parts which are to be removed. When the method is performed, each abdominal section is held in place and supported, each abdominal section being passed along a number of processing units. According to the invention, the ribs are weakened locally between the ends, and then bent over at a subsequent processing unit so that they break at the location of the weakened areas. By this method, it is possible to remove by machine at least one of the two rib parts formed in this manner.
