To cut food material, in particular potatoes and sweet potatoes, into continuous close-loop shapes, a cutting blade assembly is used. The cutting blade assembly consists of an outer and at least one inner concentrically arranged cutting blade, where each cutting blade has a close-loop cross-sectional shape. The space between adjacent cutting blades forms a cutting tube. The cutting tubes ultimately form the cross-sectional shapes of the cut food material. Supports, such as blade guides and plungers are slidably positioned between the cutting blades in the cutting tubes. These supports maintain the distance between adjacent cutting blades and assist in separating cut food material from the cutting blades. This cutting blade assembly may be used in a method and system for cutting food material into continuous close-loop shapes.

An improved slicer having a reciprocating blade is disclosed. The use of a reciprocating blade allows the configuration and functionality of the slicer to be modified to address many of the deficiencies of current rotary slicers. The slicer operates without manual intervention, and includes the capability to automatically stack the sliced products. In other words, the food product to be sliced is placed on the slicer, and the slicer automatically slices the food product and stacks the sliced product, in a configuration that is presentable to the customer. In some embodiments, the machine is designed to have certain zones that can be cleaned or replaced, while the rest of the machine is never contaminated. In addition, the reciprocating blade is inexpensive and easily replaceable, thereby eliminating the need to sharpen the blade. 1. The present invention relates to a rotary cutting apparatus for cutting a web of material, including a cutting unit rotatably mounted on a support, a rotary cutter rotatably disposed in the cutting unit, the rotary cutter having a longitudinal axis, and at least one cutting edge disposed on the rotary cutter, wherein the at least one cutting edge is orientated at an angle to the longitudinal axis of the cutter. The cutting unit being counter orientated to the feed direction of the web by an adjustable angle equal to the cutting edge angle, less than the cutting edge angle or greater than the cutting edge angle. 1. A rotary cutting apparatus for cutting a web of material , the cutting apparatus comprising:a support;a cutting unit movably disposed on the support;a rotary cutter rotatably disposed in the cutting unit, the rotary cutter having a longitudinal axis; andat least one cutting edge disposed on the rotary cutter, wherein the at least one cutting edge is orientated at an angle to the longitudinal axis of the rotary cutter, the cutting unit being adjustably counter orientated to a feed direction of the web by an adjustable angle.2. The rotary cutting apparatus of claim 1 , wherein the cutting edge angle is of about 0.5° to of about 15°.3. The rotary cutting apparatus of claim 1 , wherein the web of material is angled with respect to the longitudinal axis of the rotary cutter.4. The rotary cutting apparatus of claim 1 , wherein the cutting unit is rotatably mounted on the support to adjust the orientation of the adjustable angle of the cutting unit to the feed direction of the web of material.5. The rotary cutting apparatus of claim 4 , wherein the cutting unit is counter-orientated to the longitudinal axis of the rotary cutter by about 0.5° to about 15°.6. A method for producing a knife assembly for a food cutting apparatus includes providing a clamp, by use of a grinding process, with an inwardly corrugated shape which is complementary to that of a knife blade of the assembly, and which forms a clamping surface which, when the knife assembly is in a clamped state, tightly fits over the knife blade, the fit being such that particles of food product being cut by means of the knife assembly are prevented from entering in between the clamp and the knife blade. 2. The method of claim 1 , wherein by use of the grinding process the shape of the clamping surface is completely complementary to the shape of the knife blade.3. The method of claim 1 , wherein the method further comprises:providing a top side of the holder, by use of a grinding process, with a corrugated shape which is complementary to that of the knife blade and which forms a bearing surface over which, when the knife assembly is in an assembled and clamped state, the knife blade tightly fits, the fit being such that particles of food product being cut by means of the knife assembly are prevented from entering in between the knife blade and the holder.4. The method of claim 3 , wherein by use of the grinding process the shape of the bearing surface is completely complementary to the shape of the knife blade.5. The method of claim 3 , wherein the knife blade has a symmetrical shape top and bottom and wherein the same grinding disc is used for providing the corrugated shapes of the clamp and the holder.6. The method of claim 1 , wherein the method further comprises:providing a bottom surface of the holder, by use of a grinding process, with a corrugated shape, such that grooves are provided on the bottom surface of the holder.7.
