Colourless solutions of invert sugar are produced by hydrolysing sucrose with a non-oxidizing acid e.g. HCl at a pH of 0-3.0 at temperature of 0-125 DEG C. so that at least 98 per cent and not more than 99.9 per cent of the sucrose is hydrolysed. If the hydrolysis is conducted within the range 2.3-3.0 the oxygen in the solution prior to inversion is removed by adjusting the solution to pH2 or lower with a non-oxidizing acid e.g. HCl, followed by addition of an alkali metal carbonate or bicarbonate or an alkali earth metal carbonate or bicarbonate until the pH is 2.3 to 3.0. The solution is then inverted and afterwards the pH is brought within the range 2.5-4.9 by adding alkali metal bicarbonate.

Salts obtd. in concn. of cation exchanger regeneration extracts e.g. KCl, CaCl2, and MgCl2, are pref. dried and used as fertilisers. Invert sugar is a cheap replacement for saccharose in sugaring wine and does not represent a foreign additive. Process allows utilisation of excess or lower quality grape-juice not suitable for wine-making.

The sugar solution with a very small quantity of citric acid and gum arabic is steam-heated to a temperature of 210 to 218‹ F. and maintained at that temperature for an hour. The mixture is then boiled, and when the temperature reaches 232.5‹ F., cold water is added and the mixture is rapidly cooled. Tartaric acid or other organic acid may be used.

Alternatively, oxygen may be passed in at the rate of 1.33 litres per litre per minute. When the fermentation is carried out in the presence of air, 0.1% of the enzyme mixture, computed on the weight of the sugar solids in the solution, is used. When air enriched with oxygen is present, 0.05% of the enzyme mixture is used. In accordance with the invention, two or more circulating pumps, provided with variable speed controllers and pressure detectors for detecting the suction pressure of each of the circulating pumps, are disposed between two beds. The flow rates of three of the four fluids introduced into or withdrawn from the system are adjusted to predetermined values, and the flow rate of the other fluid is controlled in such a manner that the suction pressure of one of the circulating pumps or the average of the suction pressures of two or more of the circulating pumps is held constant, and a rotational speed of each of the circulating pumps is controlled independently so as to control the flow rate of the circulating fluid and to maintain the suction pressure of each circulating pump at a low level.

It consists of. to make a hydro-organic medium by mixing the sweet juice with an active methylene ketone compound, a calcium-based catalyst and preferably ethanol, b. stirring the medium until furan polyol is formed by condensation of the ketone compound and of saccharides with an aldehyde function and c. allowing the furan polyol to precipitate and separating it physically from the liquid medium; the latter is completely free of saccharides with an aldehyde function. Предложенный способ хроматографического разделения глюкозно-фруктозного сиропа предусматривает пропускание исходного сиропа через гранулированный адсорбент в виде сульфокатионита, сшитого дивинилбензолом в кальциевой форме Са++ с размерами гранул 0,31 мм и элюирование разделенных компонентов водой. Причем используют глюкозно-фруктозный сироп, нагретый до температуры 70°С. Глюкозно-фруктозный сироп с содержанием сухих веществ 60% и элюент, также предварительно нагретый до 70°С, подвергают дегазации и микробиологической очистке. Затем подают одновременно в систему разделения глюкозно-фруктозного сиропа, состоящую из четырех колонок-ячеек, снабженных адсорбентом, соединенных между собой трубопроводами с циркуляционными насосами и клапанами, управляющими потоками. Причем периодическое переключение клапанов в направлении внутреннего циркуляционного потока создает переменное перемещение слоев адсорбента, то есть имитацию «псевдоожиженного слоя».

The 42% syrup is also used as the eluent for the SMB apparatus and may be reconstituted from the raffinate stream by passing the raffinate stream over a glucose isomerase column alone or in combination with a dextrose feed. ABSTRACT An improved process for separating a fluid feed stream containing a mixture of substances (fructose and dextrose solutions) into a plurality of streams richer in one or more of the substances by alternately passing the mixed fluid feed stream and an elution fluid stream through a chromatographic separation column to obtain an effluent stream. She column has a chamber containing an adsorbent which has a selective affinity for one of the substances in the fluid feed stream so that portions of the effluent stream have higher concentrations of one of the substances. Thereafter, separate successive portions are collected of the effluent stream having higher concentrations of at least one of the substances. The process involves first densely packing the adsorbent in the chamber of the separ-ation column, and the chamber is devoid of any internal flow distributing structure. The adsorbent is such that it contracts to a reduced volume in the presence of a selected reagent, and swells when the excess of concen-trated reagent is removed. The adsorbent is disposed in the separation column chamber in its reduced volume condition and is effectively confined in the chamber of the separation column. She excess of the concentrated reagent is removed from the adsorbent so that the adsor-bent swells to completely and uniformly pack the separa-tion column chamber and thus eliminates channeling and turbulent flow, and improves the uniformity of the cross-sectional flow rate across the column chamber. ABSTRACT OF THE DISCLOSURE A process for the removal of sucrose from a sugar mixture, comprising: contacting an aqueous solution of a sugar mixture containing sucrose with a water-insoluble glucan produced by cultivating a bacterium of species Streptococcus salivalius on a sucrose-containing medium to effect reaction therebetween, and separating and recovering the water-insoluble glucan from the resulting reaction mixture. Sucrose is believed to be a primary cause of dental plaque and caries and thus removal from food products, such as honey, in such a manner as to avoid changes in taste and apparent sweetness is desirable. The prior art does not provide any commercially feasible means of sucrose removal.
