... 본 발명은 이산화염소(chlorine dioxide) 가스 처리를 이용한 밤(chestnut)의 저장 중 고품질 유지 기술에 관한 것으로, 구체적으로 밤에 이산화염소 가스를 15 ppmv의 농도로 20분 동안 처리하였을 때, 이를 저장하여 8주가 지난 상태에서 호기성 세균 수를 측정한 결과, 대조구과 비교하여 30%가 감소하였고, 효모 및 곰팡이 수도 20% 감소하였으며, 중량감소율은 50%가 감소하였고, 부패율 또한 75%가 감소한 수치를 나타내었으며, 이산화염소 가스 훈증 처리에 의한 외관적 색도의 변화는 없음을 확인하여, 상기 이산화염소 가스의 처리 조건을 통해 수확 후 밤의 외관적 품질을 유지하면서, 저장 중 미생물학적 안전성을 확보하고, 해충 피해를 감소시켜 부패율을 낮추는 밤의 저장 방법으로써 유용하게 사용될 수 있다.
