The present invention relates to a method for preparing walnut sausage by adding pretreated walnut powder and, more specifically, to high value added sausage containing walnut powder with improved functionality, preference of consumers and quality and to a preparation method thereof. The method comprises: a first step of mixing a first mixture (pork, pork fat, pepper, crushed garlic, ginger, onions, red peppers) and a second mixture (herb salt, nonfat dry milk, basil, refined sugar, water, soybean starch, red ginseng powder and seasoning); a second step of aging the mixture; a third step of mixing the aged mixture and pretreated walnut powder; a fourth step of molding the prepared sausage; a fifth step of sterilizing and cooling the sausage; and a sixth step of cutting and packaging the sausage to prepare products.
