... 본 발명은 오르니틴 생성능을 지닌 유산균을 포함한 막걸리 키트의 제조방법에 관한 것으로, 보다 상세하게는 팽화미, 누룩, 조효소제, 효모, 유산균스타터 및 아르기닌을 포함하는 막걸리 키트를 제공함으로써, 가정에서 누구나 손쉽게 생막걸리를 만들어 마실 수 있음은 물론, 중성지방 축적 억제 및 비만을 예방할 수 있는 아미노산인 오르니틴의 함유량을 현저히 높인 오르니틴 생성능을 지닌 유산균을 포함한 막걸리 키트의 제조방법에 관한 것이다. 본 발명인 오르니틴 생성능을 지닌 유산균을 포함한 막걸리 키트의 제조방법은 팽화미 100 중량부에 대하여, 당화제 8~12 중량부, 효모 0.3~0.5 중량부, 유산균스타터 0.1~0.2 중량부 및 아르기닌 0.01~0.03 중량부를 준비하는 단계; 상기 당화제 및 효모를 혼합하여 당화 혼합물을 제조하는 단계; 상기 팽화미, 당화 혼합물, 유산균스타터 및 아르기닌을 각각 폴리에틸렌 내포장지에 담아 열접착으로 밀봉하여 각각의 내포장물을 형성하는 단계; 상기 각각의 내포장물을 박스에 담아 포장하는 단계; 를 포함하며, 상기 당화제는 팽화미 1 g에 대하여, 전통누룩 18~24 SP, 개량누룩 11~17 SP, 조효소제 18~24 SP를 포함하여, 당화력이 47~65 SP이고, 상기 당화력은 일반적으로 당화력이 360~420 SP인 전통누룩과 1200~1500 SP인 개량누룩과 600~800 SP인 조효소제를 각각 상기 팽화미 1 g에 대하여, 전통누룩 18~24 SP, 개량누룩 11~17 SP, 조효소제 18~24 SP로 맞추기 위하여, 상기 당화제 8~12 중량부는 전통누룩 5~6 중량부, 개량누룩 1~2 중량부, 조효소제 2.5~3.5 중량부로 이루어지며, 상기 유산균스타터는 오르니틴 생성능을 지닌 페디오코커스 펜토사세우스 TNO-4(Pediococcuspentosaceus TNO-4)를 이용하여 제조한다.
