When used, a sealed cartridge (1) containing a measure of a substrance which dissolves in or is extracted by a liquid in order to prepare a beverage, is placed in a liquid collection element consisting of tapered cup (9), whereafter the whole is placed in the receptacle (21) of a coffee machine 'scoop'. The top of the cartridge (1) is pierced by a piercing and injecting element which injects a pressurized liquid into the cartridge (1). The membrane (2) forming the bottom of the cartridge is deformed by this pressure and pushed against spikes (13) located at the bottom of the cup (9). The liquid flows through the receptacle (21) and can be collected in cups. The contact time between the substance contained in the cartridge and the liquid intended to dissolve or extract it can thereby be optimized.

On opère selon les étapes suivantes : a) on introduit par le haut de la cartouche une quantité d'eau de prémouillage à une pression comprise entre 2 et 3 kg/cm², b) on injecte de l'air pour assurer une aération du café moulu ou de la substance aromatique à une pression comprise entre 3 et 6 kg/cm², c) on introduit de l'eau pour l'extraction proprement dite de la cartouche à une pression comprise entre 8 et 16 kg/cm² et on récupère par le bas de la cartouche la boisson. The invention relates to a method for extracting closed cartridges containing roast and ground coffee or another aromatic substance. The following steps are carried out: a) a quantity of pre-wetting water is introduced from the top of the cartridge at a pressure of between 2 and 3 kg / cm², b) air is injected to ensure aeration of the coffee ground or aromatic substance at a pressure between 3 and 6 kg / cm², c) water is introduced for the actual extraction of the cartridge at a pressure between 8 and 16 kg / cm² and recovered by the bottom of the cartridge the drink.

A valve assembly is disclosed, which includes a valve body defining a valve chamber and a moveable member. The moveable member has a valve element at its first end and an armature at its second end. The moveable member is moveable in an axial direction to selectively open and close the valve. The entire moveable member is spaced from the walls of the valve body when the valve is open or partially open. A flexible membrane forms a seal against the moveable member and the valve body to divide the valve chamber into a flow chamber in which the valve seat and valve element are located and a pressure compensation chamber within which the armature is entirely enclosed. A first fluid port is fluidly connected to the pressure compensation chamber via one or more bores in a pressure compensation flow path with at least one opening extending into the pressure compensation chamber at an axial position between the armature and the flexible membrane. The pressure compensation flow path includes a first axial portion with a first cross-sectional area and a second axial portion with a second, smaller cross-sectional area.
