Ruošiant žuvies sūrimo arba krevečių surimio želė produktus, dabartinis išradimas gali veiksmingai blokuoti katepsiną L, kuris sukelia surimio želė gedimą, taikant specifinį aukšto slėgio CO2 terminio apdorojimo būdą, taip pagerinant žuvies surimio arba krevečių surimio produktų želė tvirtumą ir pagerinant produkto laikymo stabilumą.
