Based on sectional mode of pH value, the acidophilic streptomycete that can generate glucose isomerase is obtained by separating and screening it from soil. Through a series of artificial mutagenizations to original bacterial strain, along with strain preparing technology and the control of fermentation procedure, the level of enzymatic activity is increased. The pH value acidophilic streptomycete is suitable for is 4-6 and the bacterium pollution does not occur easily at this value. After the fermentation of acidophilic streptomycete ends, appropriate carrier and fixing technique are selected to prepare fixed glucose isomerase used for the production of high fructose syrup.
