The present invention relates to a method for manufacturing tongue sole jelly, more specifically, to tongue sole jelly which is not melted at high temperatures and whose shape can be maintained by adding gelatin or transglutaminase when the tongue sole jelly is manufactured by boiling skin of tongue sole and then cooling the boiled liquid of the tongue sole. According to the present invention, the tongue sole jelly, which can maintain the shape thereof at room temperature without melting and has excellent quality such as flavor, can be manufactured.
