Реферат: A method of drying yeast after its separation from the wort consists in adding water-soluble substances to the yeast, mixing them with the yeast, and immediately afterwards separating the newly-formed solution from the yeast without any fermentation taking place. The substances are preferably such as are used for the subsequent production of new quantities of yeast. Concentrated sugar products, or nutritive concentrated salts may be added separately, or in combination, to the yeast. If 100 kilograms of yeast containing 74 per cent water are mixed with 50 kilograms of sugar syrup containing 45 per cent water, a residue, after filtration, is obtained which contains 26 kilograms of yeast and 20 kilograms of water. When 100 kilograms of yeast, 15 kilograms of sugar and 1 kilogram of primary sodium phosphate are mixed, about 45 kilograms of solution are withdrawn by filtration.
