Реферат: The present invention relates to a process for the preparation of a mixture comprising oligodextrans a substantial portion of which is comprised of oligodextrans of the general formula (O-.alpha.-D-glucopyranosyl-.alpha.(1?2))m (O-.alpha.-D-glucopyranosyl-.alpha.(1?6))nA, where A is a residue of a sugar acceptor of glucose selected from the group consisting of maltose, isomaltose, isomaltotriose, methyl .alpha.-glucoside, and glucose, m is 1 and n is 1, 2 or 3, the position of the .alpha.(1?2) glucoside bond being at the non-reducing end or constituting a branching point of each oligodextran, wherein sucrose and a sugar acceptor of glucose selected from the group consisting of maltose, isomaltose, isomaltotriose, methyl .alpha.-glucoside, and glucose are brought into contact in the presence of glucosyltransferase enzyme extracted from the strain B-1299 of Leuconostoc mesenteroides for approximately 2 to 48 hours in an aqueous medium. The products obtained are useful as fillers in sugar substitutes and as foodstuff additives.
