The present invention relates to a method for producing solid mulberry jam to this end, the solid mulberry jam is produced by the following steps: mixing sugar and boiled mulberry juice which is obtained by boiling the same for 10 minutes with heat; adding pectin as a solidifier, agarose, and gelatin, and then mixing the same; and hardening the same by cooling. On a functionality test conducted on the solid mulberry jam, the score for the functionality such as softness, color, and aroma was the highest when mixed in the weight ratio of 1:0.3:0.7 for pectin, agarose, and gelatin respectively, and solidified feature was excellent when mixed in the weight ratio of 1:0.9:2.1. Accordingly, the production method can be useful in the production of solid mulberry jam ensuring excellent functional preference while containing nutrients of mulberry. ... 본 발명은 친환경 공법을 적용한 코르도반 가죽의 제조방법에 관한 것이다. 보다 상세하게는 피혁 제조공정 중 효해 공정에서 단백질분해효소와 지방분해효소를 투입하여 종래의 딱딱한 코르도반 가죽을 부드럽게 가공할 수 있도록 하고, 탄닌공정을 두 단계로 나누어 진행함으로써 장시간 소요되는 종래의 탄닝 공정 시간을 단축시킴으로써 생산성을 향상시킬 수 있도록 하고, 우수한 품질을 가진 가죽을 제조할 수 있도록 하는 친환경 공법을 적용한 코르도반 가죽의 제조방법에 관한 것이다. 이를 위해 본 발명은 (a) 탈회공정을 거친 코르도반 가죽에 단백질분해효소, 지방분해효소를 포함하는 군 중 선택된 어느 하나 이상을 투입하는 효해공정; (b) 효해공정을 거친 결과물에 침산공정을 거친 후 식물성 탄닝 공정을 하기 위한 준비공정으로, 비크롬계 금속탄닝제를 처리하는 전 탄닝공정(Pre-tanning process); 및 (c) 전 탄닝공정을 거친 후 식물성 탄닝제를 투입하여 가죽의 충진감 및 내열성을 증진시키기 위한 메인 탄닝공정를 포함하는 친환경 공법을 적용한 코르도반 가죽의 제조방법을 제공한다.
