Реферат: 1423004 Dairy food flavourings SUNTORY Ltd and SHIONO KORYO KAISHA Ltd 17 April 1973 18405/73 Heading A2B A foodstuff, especially natural or artificial butter, cheese, cream or milk, is flavoured by adding thereto 8-nonene-2-one either alone or together with one or more other flavouring compounds. These other compounds may be saturated or unsaturated straight chain fatty acids having an even number of 4 to 18 C atoms, lower alkyl esters of the acids, saturated straight chain methyl ketones having 3 to 15 C atoms, aliphatic aldehydes having 2 to 12 C atoms, aliphatic secondary alcohols having 3 to 9 C atoms, diacetyl, acetoin and/or solvents. Either 0.2 to 100 ppm. of 8-nonene-2-one alone or 0.1 to 1% of a flavouring mixture containing 1 to 10% of 8-nonene-2-one be added to the foodstuff. The foodstuff may be one made from butter, cheese, milk or cream, e.g. cakes, biscuits, or drinks.
