Tomato peeling method - for use prior to canning whole tomatoes
Реферат: The tomatoes, intended for preservation as whole peeled tomatoes, are subjected to a cold water wash followed by a quick boiling treatment of brief duration; means are provided for maintaining the fruits in the boiling water at 105-110 degrees C. for a pre-determined time of 3-6 min. Under these conditions the skin is only partially cooked, so that its sepn. from the pulp can be effected by a peeling machine, of a known type, without making any incision on the skin. The peeled fruits are then ready to be placed in cans. No undesirable alteration in the fruit takes place during the process and there is no risk of destroying or tearing the thin layer, very rich in sugar, which surrounds the pulp.
